You don’t (change it).
You give the TV a 1080p signal, then that is what the TV displays. Most common way of providing a 1080p signal is a blu-ray player.
Assuming your Bravia is a 1080p native (i.e. 1920×1080) resolution it will always display whatever resolution is input at 1080p. If it’s a 720p (1366×768 resolution) model it might accept a 1080p signal, but will downsample to fit the native resolution. You adjust output resolution on a source device (e.g. Blu-ray player) not on a display.
